Alrighty, now, I don’t claim this is my idea or my recipe but I do love it. Chicken Ramen noodles with Enoki mushrooms. Say it out loud. E N O K I. I just love saying it. Always wondered what those fungus straw thingies were. They are delicious and mild.
Of course, if you are going to make home-made Ramen noodles, you have to make the chicken broth from scratch (which I did). Wanted to make the noodles from scratch as well but, the kids were acting up, so I settled for pre-made noodles.
Chunks of chicken, roasted tomatoes, soft boiled eggs, can it get any better than that? A pleasure for the eyes and a pleasure for the pallet.
