So, I tried to do this with something besides Cod (my favorite fish) because they didn’t have what I wanted. Instead, I used Whiting. It was okay but, next time I will use Cod or not make it.
Decided to dress it up a bit by putting some smashed avocado on the tortilla, then the fish and, on top of the fish some pico de gallo. I served it with some rice and some whiskey baked beans. On a scale of, would I do it again or not, the answer is I would but not with Whiting. Whiting is too soft. I like my fish with some texture and a bit of firmness to it.
