Since one of my daughters is Mexican, we have some Mexican food from time to time. Last night, I made some Chimichangas. After letting the roast slow cook all day, I shredded it up and put it on tortillas with some cheese and then fried them. Should have deep fried them but, I was in a hurry and could do it faster in the pan. Topped with some enchilada sauce, home-made guacamole and sour cream, served with some Mexican rice. Delicioso.
