Pasta with Tomatoes and Olives

Sometimes, I want a pasta dish that isn’t all sauced up, something a bit lighter and more fresh tasting. This dish utilizes diced Roma tomatoes, black olives, Capers and Feta cheese. I made mine with some cooked ground beef but, if you leave the beef out, you have a great vegetarian dish. Throw in some garlic and drizzle a little EVOO and you have one tasty dish. You could substitute the diced Roma tomatoes with some sun dried tomatoes for an even more exotic flavor. Delicious.
