I live in the South and have for most of my life. Some things are just expected down here such as, biscuits and gravy, fried chicken and, of course, chicken fried steak. There are many ways to do this traditional entree but, I decided to take it up a notch or two.
Many times, the second thing we do (after dredging it in flour with seasonings) is to dip it in a egg wash. My egg wash uses hot sauce instead of milk. In fact, I put 1/4 cup of hot sauce for every egg used. You probably don’t want a really hot sauce here. I use Louisiana Hot Sauce for this dish as it gives some really good flavor but won’t burn your mouth up.
Add a couple good sides like fried potatoes with onions and some buttered corn and you have a fantastic meal – Southern style.
